I love Squash

I usually only see the small yellow squash in the store so I was excited to see these rather large pieces. All I know to do with them is slice them, put them on a plate and steam them in the microwave. I think next time I see these I will try to re-create the Artichoke pie but use squash instead of the artichokes. Any other suggestions? HNS - don't worry. I know you won't eat it. This will just be for me.

Granny would slice up enough squash to fill up the large cast iron skillet, cut up an onion, add a "LITTLE" bacon grease, water, salt, pepper, then cook until it is nice and mussy--YUMMY!! I could eat the entire pot! I love squash (only yellow) also!!

I do the same thing that Granny did, try it- it's wonderful! I use butter but I am sure bacon grease would only enhance the experience. Last night, I made one of my spicy stir fries and I used yellow squash in that. It worked!

Jacquie O.- Get your mind out of the gutter - you are sick and should get some help. And I am guessing you meant to write "picked" not "oinked" - unless oinked is some new lingo the kids are using. :)

I'm with Meme. Mama does the BEST squash and onions. I have a really good casserole recipe, too. I'll find it and bring it when I see you on Friday...

Why yes, as a matter of fact, "oinked" or "oink" is the hip word out there. For example when Anson see's us eating a lot of food and he says "oink" to us...it really means that he is cool with it.

on the grill is always delicious- with a little old bay or a little montreal steak seasoning (but problem not both at one time!)

OH yea, I forgot one of my favorites. If you cut it lengthwise, put it in aluminum foil with some olive oil and rosemary and grill it for a few minutes, it's exquisite (as Harry would say). Did you hear the one where Harry said the chicken fingers at his favorite restaurant were exquisite?

i use yellow squash in everything - it tastes wonderful grilled, i also sautee it with garlic and parsley (very french)and it is always wonderful with a few other veggies in a thai coconut curry.
