Okra gets fried
I am well aware this does not look pretty. Believe me, I know pretty and this ain't it. But it was good. I cut the okra into pieces Friday night and salted it. It sat overnight in the fridge. This stuff was really sticky. Apparently the salt brings out even more stickiness. All I had to do Saturday was toss it with a little flour and corn meal. It was very tasty. HMS and I had my BFF over to eat since he is going away for a week of beach fun. I made my meatloaf and mashed potatoes. Good comfort food is always a good way to kick start a vacation. And they went well with the crispy, salty fried Okra. I definitely would make this again. Maybe HNS would eat spinach if I could find a way to fry it.

Yay - the okra was a success! And that brunch menu looks delicious! But if I have to have another baby to rate that, I don't know...does my Urinetown role count???? Wait til you see THAT belly. Schmara will feel like a willow. She looks beautiful by the way, and as it's been many years since she and I were in a show together, I would love to say Hi and welcome back!
You know I am fairly sure that I have never tried okra. It wouldn't be the kind of food my Italian Mom would make. And as you know I don't cook unless I am drunk or forced to at gun point. What does it taste like JB?

I will have to make more and bring it in. But it tasted to me like crunchy fried salt- you know - in a good way.

Let's see, Daddy's garden, well, we had LONG, long rows of butter beans (you probably say lima beans), which I love more than anything to eat (but only cooked by Mama) and HATED to pick in the heat of summer. Multiple rows of corn, beautiful tomatoes (and he liked to tinker with different varieties), squash, green beans, cucumbers, peas, sometimes watermelon and cantaloupe (Halifax County is known for cantaloupe like Hanover for tomatoes). You see, I grew up in the way far back sticks. And some of my best memories of my daddy are in the garden, working together. He also had a little orchard, and he would be so pleased to see how massive his fig bush (tree?) is now. He didn't think it would make it. I haven't planted a thing since I left home, but when we visit Mama's, she sends us home with a carload of produce. My brother still plants a smaller version for her every year, and she does a lot of freezing and canning, so we have home grown veggies for Christmas dinner. The grandchildren have warred over who takes home the leftover corn, but her favorite son-in-law always gets his own batch of homemade brunswick stew. It's cute. I'm glad I put that in black and white - thanks JB.
anything fried will do for our boys- i bet we could fry something uneatable an they would eat it if it was fried!
Wow Lisa. That is the coolest. Can't wait to see you and hear more about this. You should write a story about the garden. It really is cool that your Dad did that.

JB, I have a delicious recipe for deep fried spinach fritters. It's from one of my favorite cookbooks called Indian Home Cooking by Suvir Saran. I will send it to you. We made them once and the poor little fritters never even made it to the table. Andy and I hovered over the pan like vultures and ate them as soon as they were cooled enough for our little greedy mouths.
