Steinberg Shrimp Cakes





So - I was craving crab cakes the other day - and was not going to the store. I tooled around my freezer and found a bag of frozen jumbo shrimp. I thought, hmmm. What could I do with these? I found a recipe on line for shrimp cakes and of course I deviated from it - but it gave me some good ideas. I chopped up the shrimp and added chopped onions and one clove of minced garlic a little flour and water and a few drops of the wine I was drinking. We also had some fresh herbs so I threw those in and they added a pretty green speckling. I stirred this into a wet paste and covered it with cling wrap and let it sit for about an hour.

The shrimp cakes turned out very well. Sometimes - I even impress myself. (and they almost look like latkies.)

Steve O. loved them too so I will probably make them a regular menu item - whenever shrimp is on sale.

Yes - chicken squares tonight - that is my comfort food - it reminds me of high school. Mom made those really well.

oooo! I just had a thought. What if you made them shrimp "scampi" cakes. A little more garlic, some parm cheese.Basil? Whatever the "scampi" herbs are? lol mmmmmmmmm.....
